Taco Cupcakes

We had "Taco Cupcakes" for dinner last night. They we so scrumpcious I could have them over and over again..
Here is what you will need:
1 1/2t chili oil (found near the Asian ingredients, just used regular light oil and it still turned out great)
1/2 lb 95% lean ground beef
1 T taco seasoning
3/4 c canned black beans, drained and rinsed (I used Pinto my fav.)
16 wonton wrappers (found in the produce section)
5 T + 1t of queso dip or salsa con queso
1 c chunky salsa
1 c reduced fat shredded Mexican chees
Guacamole for serving
 First you need to preheat the oven to 375.
Second you add the oil, ground beef and taco seasoning into a skillet and brown the meat over medium-high. After it is browned add the beans and cook until warm
 Put a wonton wraps into a lightly greased cupcake pan. Then add the queso.
 and the meat, salsa, and cheese.
 Place another wrap on top of all the ingrediants and do another layer of cheese, meat and beans, salsa, and cheese.
 This is how it should look before you place in the oven.
 Place in the oven and cook for 18-20 minutes.
Then put the guacamole on top and serve.I dont like gucamole but sour cream and ranch is also another get topping to put on top.

I also made homemade Wonton Wraps. Heres a quick recipe for those just incase some can't find it at the store. They were quite delicious and you can't tell the difference.
What you need...
1 egg
3/4 tsp salt
2 cups of flour
1/3 to 1/2 of water as needed
Directions
Light beat the egg and salt together. Add 1/4 cup of water.
Sift flour in a large bowl make a well in the middle and then add the egg, salt and water mixture.
Add as much remaining water as necessary to form a dough. (add more water than what the recipe calls for if dough is too dry.
Form dough into a ball and knead for about 5 minutes.
Cover and let it rest for about 30-45 minutes.
Turn the dough out on a lightly floured surface and roll out until paper thin.
(At this part I did it in sections, easier to work with. when I got it as far as I could I used a cookie cutter and cut it into squares. I then let it sit again for about 15-20 minutes and then took one slice at a time and rolled it even thinner. I tried to get 2-3 more wraps out of the one slice.)
Doing those steps helped so I did not sit at the counter over working myself to get it paper thin.
Once they are done you can place in a bag in the fridge or freezer until you need to use them.
